Karayolu taşımacılığında tarımsal ürünlerdeki kalite kayıplarına titreşim ve paketleme çeşitlerinin etkileri

Abstract

Türkiye’de farklı iklimlerin bir arada görülmesi, ülkenin verimli ve geniş arazilere sahip olması birçok tarımsal ürünün yetişmesine imkân sağlamaktadır. Bu özelliklere sahip olmasından dolayı Türkiye, dünyada tarımsal potansiyeli en yüksek ülkelerden biri olmuştur. Türkiye gibi gelişmekte olan bir ülke açısından tarımsal ürünlerin nakliyesi esnasında kayıplarının önlenmesi, gıda güvenliğinin sağlanması ve koşulların iyileştirilmesi ülke ekonomisi için büyük önem taşımaktadır. Tarımsal ürünlerin mekanik hasara uğraması, hasat sonrası yaşanan başlıca sorunlardandır. Temel olarak hasarlar darbe (şok), titreşim ve basınçtan kaynaklanmaktadır. Bu etkiler meyve ve sebzelerde yapısal olarak bozukluklara yol açmaktadır. Bunların sonucunda da kalite kayıpları hatta ürün kayıpları yaşanmaktadır.Bu çalışmada ilk olarak tarımsal ürünlerin nakliyesi esnasında maruz kaldığı titreşim etkisi araştırılmıştır. Ürünler bu süreçte darbelere ve basınç etkisine de maruz kalmaktadır. Fakat yol ve araç koşullarına bağlı olarak titreşim, ürünlerin sürekli olarak maruz kaldığı bir etki olduğu için bu konu üzerine yoğunlaşılmıştır. Titreşimden kaynaklanan yorulma hasarı ve rezonansın etkisiyle kalite kayıpları oluşmaktadır. Etkilerin sonuçlarının ortaya konması amacıyla ülkemizde en fazla üretimi yapılan elma çeşitlerden biri olan Golden Delicious çeşidi elma üzerinde çalışma yapılmış, ülke standartları ve uluslararası standartlarından bahsedilmiş; meyvelerin taşınması, saklanması ve korunması için gerekli olan ambalajlar hakkında bilgi verilmiştir.Son aşamada ise kusurların saptanması amacıyla ürün görselleri üzerinde çalışma yapılmıştır. Golden Delicious çeşidi elmanın Matlab vasıtasıyla, HSV (Hue, Saturation, Value) renk uzayı kullanılarak farklı meyve numunelerinde görüntü işleme tekniklerine bağlı olarak kusur tespiti yapılıp sonuçlar değerlendirilmiştir. Çalışmanın sonunda da renk değişimi meydana gelmiş bölgeler gösterilmiş ve kusur yüzdesi hesaplanmıştır.

Presence of different climates in Turkey, the country's efficient and extensive grounds provide the opportunity to grow many agricultural products. Because of these features, it has become one of the countries with the highest agricultural potential in the world. Prevention of losses during the transport of agricultural products in terms of a developing country such as Turkey, ensuring food security and improving the conditions is of great importance for the national economy. Mechanical damage to agricultural products is one of the major problems for post-harvest. Basically, damages are caused by shock, vibration and pressure. These effects cause structural defects in fruits and vegetables. As a result, quality losses or product losses occur.In this study, firstly, the effect of vibration on agricultural products during transportation was investigated. Products are also exposed to sudden impacts and pressure stresses in this process. However, due to road and vehicle conditions, vibration is more focused on this subject because the products are subject to continuous exposure. Due to fatigue damage caused by vibration and the effect of resonance, quality losses occur.In order to reveal the results of the impacts, one of the most cultivated apple varieties in our country, Golden Delicious apple was used, country standards and international standards are mentioned. It is informed about the packaging required for transport, storage and preservation of fruits.At the last stage, product images were examined in order to determine the defects. According to image processing techniques of different fruit samples, defect detection was performed by using HSV (Hue, Saturation, Value) colour space by means of Matlab program of Golden Delicious variety and the results were evaluated. At the end of the study, colour change regions were shown and percentage of defect was calculated.
