Publication: Karton gıda ambalajlarının üretimi ve hijyen kurallarına uygunluğunun incelenmesi
Abstract
KARTON GIDA AMBALAJLARININ ÜRETİMİ VE HİJYEN KURALLARINA UYGUNLUĞUNUN İNCELENMESİ Üretilen gıda ürünlerinin hijyenik ve sağlıklı olarak tüketiciye ulaşması için ürünün ambalajlanması gerekmektedir. Ambalaj ürünü dış etkilerden koruduğu gibi, gıda maddesine zarar da verebilmektedir. Gıdanın tüketiciye bozulmadan ulaşması doğru ambalaj ile sağlanabilir. Bu çalışmada karton gıda ambalajları ve hijyenin insan sağlığı açısından önemi konusuna kısa bir giriş yapıldıktan sonra; ikinci bölümde ambalaj kavramı ve tarihsel gelişimi, ülkemizde ve dünyada ambalaj sanayinin genel durumu hakkında bilgiler verilmiş ve gıda sanayinde ambalajın önemi ve fonksiyonları üzerinde durulmuş ve gıda sanayinde kullanılan ambalaj materyalleri hakkında verilmiştir. ikinci ve Üçüncü bölümde kâğıt-karton gıda ambalajlarının fiziksel ve kimyasal özelikleri üzerinde durulmuş ve bu bölümlerde kâğıt-karton ambalajı imalatı ile ilgili detaylı bilgiler verilmiştir. Dördüncü bölümde ise, karton gıda ambalajları ve hijyen ile ilgili Türk Gıda Kodeksinde belirtilen kurallar ve yönetmeliklerden bahsedilmiştir. Ambalaj seçiminin önemi ve migrasyon ile ilgili açıklamalar yapılmıştır. Son bölümde ise yapılan çalışma sonunda elde edilen sonuçların değerlendirilmesi yapılmıştır.
CARDBOARD FOOD PACKAGING PRODUCTION AND EXAMINATION OF COMPLIANCE WITH HYGIENE RULES Packaging is compulsory for food products, in order to maintain food hygiene and deliver healthy products to consumers. The package is to preserve the natural food compound from outer influences, on the other hand, the wrong packaging can also lead food deterioration. Making food safe and healthy for the consumers, is possible only by right material selection and proper process of packaging. The introduction of this paper includes the definition and historical improvement of packaging, on the second chapter a long with the local and global overview of packaging industry. the importance of packaging in food ındustry and focused on the functions and general information about packaging materials are used in food ındustry. The second and the third chapter explain the importance and function of packaging in the food industry. Also these chapters give general information on the materials used in the food packaging industry. The fourth chapter covers the development of paper - carton paper sector, the production process of carton paper food packages and the additional materials used in manufacturing of carton paper packages. The fifth chapter summarizes the regulations of carton-paper food packages and hygiene standarts in Turkish Food Codex and discusses the importance of package selection for food as well as explaining migration. The last chapter can be considered as an evaluation of the information acquired during the study.
