Yatlarda mutfak bölümünün işlev, malzeme ve donanım açısından incelenmesi

Abstract

YATLARDA MUTFAK BÖLÜMÜNÜN İŞLEV, MALZEME VE DONANIM AÇISINDAN İNCELENMESİ Yatlarda mutfak-kuzine bölümünün incelenmesi doğrultusunda giriş bölümünde tezin amacına, kapsamına, literatür taramasına ve yöntemine yer verilmiştir. İkinci bölümde, yatların tanımı, yapısal kısımları, kesitleri, tarihçeleri aktarılıp sınıflandırmaları örneklerle anlatılıp kendi içlerinde tipolojik sınıflandırılmaları doğrultusunda ayrı ayrı incelenmiştir. Üçüncü bölümde, ilk olarak yatlarda yaşam biçimi, seyir ve marina yaşamına değinilmiştir. Bu konuda bilgiler aktarıldıktan sonra, yatlarda mekânsal yerleşim ve kullanım fonksiyonları genel olarak incelenmiştir. Yatlarda tesisat sistemleri ve donanımlarına yer verilmiştir. Dördüncü bölümde tez başlığı ana konusu olan yatlarda bulunan mutfak bölümünü işlev, malzeme ve donanım açısından incelenmiştir. Yatlarda boyutun ve kullanıcı sayısının artması, mürettebatın da eklenmesi ile mutfaklarda sınıflandırılabilmektedir. Bunlar, ana mutfaklar dışında; pantryler (servis mutfakları), mürettebat mutfakları (crew messler) ve küçük boyut yatlarda kullanılan bar tezgahlar/ wetbarlardır. Mutfak bölümünün planlanması ve işlevi hakkında bilgilere yer verilmiştir. Mutfak bölümünde güvenlik önlemleri ve sistemleri üzerinde durulmuştur. Mutfak bölümünün yapısal ve mekânsal donanımları, hakkında bilgiler aktarılmıştır. Beşinci bölümde ise farklı tipolojilerde yat örnekleri üzerinden mutfak bölümü örnekleri incelemelerinde bulunulmuştur. Yatlarda mutfak bölümü ile ilgili yat kullanıcıları ile yapılan anket çalışması yapılmıştır. Anket soruları ve gelen cevaplar aktarılmıştır. Tasarımcılar ve yat şefi ile yapılan röportaj çalışmasına yer verilmiştir. Sonuç bölümünde; yatların tipolojik sınıflandırmaları yatlarda iç mekân bölümüne ve yaşam biçimine olan etkilerinin önemi üzerinde durulmuştur. Bir yelkenli yatın ve motoryatın karakteristik özellikleri yaşam biçimlerini, fonksiyonları, mekân detaylarını doğrudan etkilediğinin vurgusu yapılmıştır. Her yatın mutfak bölümü boyut, işlev, donatı bakımından birbirinden farklıdır. Deniz aracı olan yatlar hareketli mekânlar oldukları için kullanıcıların güvenli ve konforlu bir seyir geçirmelerinin önemi vurgulanmıştır. Tez çalışması kapsamında farklı yat tipolojileri arasında kuzine bölümünde farklılık olduğu ortaya konmuştur. Bu tezin sonunda yatlarda mutfak bölümü; özellikleri, tasarım ilkeleri ve mekân kurgusu üzerinde iç mimarlık mesleği kapsamında incelenmiş olup, iç mimarların yat tasarımı ve sektöründeki önemi vurgulanmış, tipolojiler arası mutfak bölümü arasındaki farkların okuyucuya iletmek amaçlanmıştır.

EXAMINATION OF THE GALLEY SECTION ON YACHTS IN TERMS OF FUNCTION, MATERIALS AND EQUIPMENT In line with the examination of the galley-cuisine section on yachts, the purpose, scope, literature review and method of the thesis are included in the introduction part. In the second part, the definition, structural parts, sections, history of the yachts are explained, their classification is explained with examples, and they are examined separately in line with their typological classification. In the third chapter, first of all, life style on yachts, cruising and marina life are mentioned. After transferring information on this subject, spatial settlement and usage functions in yachts are examined in general. Information about electrical, HVAC installation systems and equipment is explained. In the fourth chapter, the main subject of the thesis, the galley part of the yachts, is examined in terms of function, material and equipment. Yachts can be classified in galleys with the increase in size and number of users and the addition of crew. These, apart from the main galleys; pantry, crew messes, and bar counters/ wetbars used in small size yachts. Information about the planning and function of the Galley section is given. In the galley section, security measures and systems are emphasized. Information about the structural and spatial equipment of the galley section is given. In the fifth chapter, the galley section examples were examined through yacht examples in different typologies. A survey was conducted with yacht users regarding the galley section of yachts. Questionnaires and answers were given. Interview work with the yacht designers and yacht chief is included. In the conclusion section; Typological classifications of yachts, the importance of their effects on the interior part and lifestyle of yachts are emphasized. It has been emphasized that the characteristic features of a sailing yacht and a motor yacht directly affect their lifestyle, functions and spatial details. The galley section of each yacht is different from each other in terms of size, function and equipment. Since yachts with sea vehicles are swinging place are, the importance of users to have a safe and comfortable cruise was emphasized. Within the scope of the thesis study, it has been revealed that there is a difference in the galley section between different yacht typologies. At the end of this thesis, the galley section on yachts; It has been examined within the scope of the interior architecture profession on the features, design principles and space setup, the importance of interior architects in yacht design and in the sector has been emphasized, and it is aimed to convey the differences between the typologies of the galley section to the reader.
