Sokakta satılan gıdaların mikrobiyolojik açıdan incelenmesi ve halk sağlığı açısından değerlendirilmesi

Abstract

Amaç: Sokak gıdaları arasında yer alan midye dolmanın İstanbul ili’nde belirlenen bölgeler için mikrobiyolojik açıdan değerlendirilmesi amaçlanmaktadır. Gereç ve Yöntem: Seyyar satış (tezgah) ve toplu tüketim yerlerinden (büfe, restoran) olmak üzere toplam 50 noktadan toplanan örneklerde konvansiyonel yöntemlerle Salmonella, Listeria spp., Campylobacter spp., Bacillus spp., Staphylococcus spp., Clostridium spp., E.coli ve Coliform grubu bakteriler ile toplam mezofilik aerobik bakteri (TAB) araştırılmıştır. Her noktadan alınan örneğin adet gramajı tartılmıştır. Bulgular: Mikrobiyolojik analiz sonuçlarına göre tüm bölgelerde TAB kontaminasyonu ortalaması 7,38±1,01 log kob/ g olarak bulunmuştur. Coliform kontaminasyonu Üsküdar bölgesinde istatistiki olarak anlamlı şekilde yüksek bulunmuştur (p<0,05). Staphylococcus spp. (S.aureus ve S.epidermidis) kontaminasyonu (%6) bir örnekte tüketime uygun miktarın üzerinde (6 log kob/ g) bulunmuştur. Örneklerde B.cereus (n=1; 2,78 log kob/ g) ve B.licheniformis (n=2; 3,18 log kob/ g ve 3 log kob/ g) tespit edilmiştir. Bir örnekte Listeria ivonovii identifiye edilmiştir. Salmonella spp., Campylobacter spp. ve Clostridium spp.’ye rastlanmamıştır. Eminönü ve Üsküdar ilçelerindeki midye dolmaların Taksim ve Beşiktaş’a göre daha yüksek gramaja sahip olduğu görülmüştür (p<0,05). Sonuçlar: Bu çalışma ile İstanbul’da satışa sunulan midye dolmaların mikrobiyolojik kontaminasyon düzeylerinin genel olarak tüketilebilir değerler içerisinde olduğu görülmüştür. Objective: The aim of this study was to investigate stuffed mussels sold by street venders in certain districts of Istanbul microbiologically. Study design/ methodology:. A total of 50 samples were collected from Kadıköy, Üsküdar, Beşiktaş, Eminönü and Taksim region in Istanbul. The samples were analysed according to the conventional methods. Salmonella, Listeria spp., Campylobacter spp., Bacillus spp., Staphylococcus spp., Clostridium spp., E.coli and Total Aerobic Count (TAC) was counted. Additionally portion per stuffed mussel was measured for all of the samples. Findings:. The mean level of contamination of TAC was 7.38±1.01 log cfu/ g among the selected regions. Coliform contamination was found significantly highest in Uskudar region (p<0.05). The frequency of Staphylococcus spp. contamination (including S.aureus and S.epidermidis) was 6% and one of them was at a unacceptable high level with the count of 6 log cfu/ g. B.cereus (n=1; 2.78 log cfu/ g) and B.licheniformis (n=2; 3.18 log cfu/ g and 3 log cfu/ g) were detected among the samples. Salmonella spp., Campylobacter spp. ve Clostridium spp. were not detected, whereas one sample was contaminated with Listeria ivonovii. The gram of portion was significantly higher in Eminönü and Üsküdar regions then others (p<0.05). Results: This study suggests that the microbiological quality of stuffed mussels are within the tolarable range in Istanbul.
