Publication: Perakende balık satış yerlerinin analizi : İstanbul örneği
Abstract
Perakende balık satış yerleri, su ürünlerini uygun koşullarda muhafaza ederek üreticiden tüketiciye ulaştırırlar. Bunun yanı sıra perakende balık satış yerleri, su ürünleri sektöründe çalışan kişiler için çok geniş bir istihdam kaynağı oluşturmaktadır. Sağlıklı ve dengeli beslenmede balığın, kaliteli bir protein kaynağı olması sebebiyle çok önemli bir yeri vardır. Bu yüzden su ürünleri sektöründe güvenilir ve kaliteli gıdaya ulaşmada perakende balık satış yerlerinin rolü önemlidir. Bu çalışma, İstanbul ilinde faaliyet gösteren perakende balık satış yerleri yetkililerinin/ çalışanlarının sosyo-demografik yapılarının ve hijyen bilgi düzeylerinin incelenmesi amacıyla yapılmıştır. Çalışma, İstanbul genelinde 60 adet perakende balık satış işletmesinde çalışanlar ile yüz yüze anket yapılarak gerçekleştirilmiştir. Çalışma kapsamında sektörel sorunlar da incelenerek çalışanların sektörden ve resmi otoritelerden beklentileri de araştırılmıştır. Aynı zamanda, mevzuat dahilinde bu işletmeleri denetleyen kontrol görevlileri ile de araştırma kapsamında görüşülmüş olup onların da bu denetimlerden ve işletmelerden beklentileri incelenmiştir. Çalışmaya katılanların %95’inin erkek olduğu ve katılımcıların ağırlıklı olarak 31-55 yaş aralığında olduğu gözlemlenmiştir. Çalışanların %40’ı otuz yıldan fazla süredir bu sektörde çalışmaktadır ve %93’ü satışını yaptığı ürünü iyi tanımaktadır. Su Ürünleri Kontrol Görevlilerinin %63’ü yapılan denetimleri yetersiz bulurken %50’si bu durumun istihdam yetersizliğinden kaynaklandığını düşünmektedir. Balık satış yerlerinde çalışanların ise %80’i bu denetimlerin balık halinde yoğunlaşması gerektiğini düşünmektedir. Araştırma kapsamında Covid-19 sürecinin perakende balık satış yerlerine olan olumlu/ olumsuz etkileri de incelenmiştir. Çalışmanın sonucunda elde edilen verilere göre su ürünleri sektöründe önemli bir yeri olan perakende balık satış yerlerinin güncel durumunun ve sorunlarının daha iyi anlaşılarak gelecekte sektörel sıkıntıların iyileştirilmesinde yardımcı olabilecek ortak ve temel bilgileri ortaya koymak amaçlanmıştır.
Retail outlets ensure that the poroducts are kept in appropriate conditions while transporting the fish from the producer to the consumer. In addition to this, retail fish outlets are also a source of employment for those who work in this sector. Fish products has a very important place for a healthy and balanced diet. The role of retail fish outlets is important in reaching safe food in the aquaculture sector. This study was carried out to examine the socio-demographic structures and hygiene knowledge level of retail fish salesmen operating in Istanbul. The research was carried out by conducting a face-to-face survey with employees in 60 retail fish sales businesses across Istanbul. Within the scope of the study, sectoral problems were also examined and employees’ expectations from the sector and authoroties were also investigated. At the same time, the control officers who inspect these businesses within the scope of the legislation were also interviewed and their expectations from these inspections and businesses were examined. It was observed that 95% of the participants in the study were male and the participants were mainly between the ages of 31-55. 40% of the employees have been working in this industry for over 30 years and 93% of the employees recognize the product they sell well. While 63% of control officers find the inspections inadequate, 50% of them think that this stiuation is due to insufficient employment. 80% of those working in fish sales think that these inspections should be intensified on wholesale market hall. Whitin the scope of the research, the positive/ negative effects of the Covid-19 process on retail fish sales were also examined. According to the obtained data as a result of the study, it was aimed to reveal the information that can help in improving the sectoral problems by better understanding the situation and problems of retail fish outlets, which have an important place in the aquaculture sector.
