Abstract
ÖZETBu çalışma 18. yy.’ın ikinci yarısında İstanbul’un et iaşesi teminini konu edinmektedir. Giriş ve iki bölümden oluşan tezin, birinci bölümünde Osmanlı Devleti’nde genel iaşe politikaları ve bu politikalar içerisinde et iaşesinin nasıl organize edildiği incelenmiştir. Et tüketimi, canlı hayvan temini, kışlaklar, salhaneler ve kasaplar bu bölümüde incelenen başlıklardır.İkinci bölümde ise, et iaşesi sürecinin kurumsal dönüşüm ve değişimi irdelenmiştir. Bu bölüm içerisinde, tezin esas kısmını oluşturan Hassa Kasabbaşılık Kurumu başlığında, 18. yy.’ın ikinci yarısında şehir halkı ve askeri kesime mensup tayinat sahiplerinin et iaşesi temininde önemli bir rol oynayan kasabbaşılık kurumunun gelişim ve değişim süreci incelenmiştir. ABSTRACTThe present study deals with the Istanbul’s meat provisioning policy in the second half of eighteenth century. Following the introduction, in the first part we studies the general policy for meat provisioning of Ottoman State and the organizational structure of this meat provisioning system within the general policy. Besides, some other concepts within the scope of the thesis such as meat consumption, animal trading, pasturages, slaughterhouse and butchers are dealt with in this part in detail. In the second part of the study, the institutional transformation process is evaluated. Under the title of the institution of Hassa Kasabbaşılık, which constitutes the fundamental part of the thesis, the evolution process of this institution which was consisted of an essential part of the meat provisioning system as needs for meat supply of civil people of Istanbul and the rest who belonged to military and who possessed special allotment were ensured by this instution, are dealt with in this study in detail.
